Nita’s Shrimp Salad

- 3 lb. shrimp, cooked & peeled
- 1 cup celery, chopped
- 4 eggs, hard-boiled, chopped
- ½ cup sweet pickles, chopped
- 1 green bell pepper, chopped
- 1 cup mayonnaise
- 1 tbsp. lemon juice
- salt to taste
- ¼ tsp. cayenne pepper
- lettuce leaves
- parsley sprigs
Combine shrimp, celery, eggs, pickles, & bell pepper. Blend mayonnaise & lemon juice in small bowl. Add to shrimp mixture & mix lightly. Season with salt & cayenne pepper.
Chill. Serve on individual lettuce leaves & sprinkle with parsley.
