Taco Soup
- 1 lb. ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (28 oz.) can tomatoes, undrained
- 2 pkgs. Taco seasoning
- 1 (1 oz.) pkg. Hidden Valley Ranch dressing mix
- ½ cup picante sauce
- 2 cans pinto beans, undrained
- 2 cups water
- 1 (6 oz.) can tomato paste
- 2 cans corn, undrained
- ~ tortilla chips
- ~ grated cheddar cheese
- ~ salt & pepper to taste
Brown beef, onion, and bell pepper; drain. Cut up tomatoes and add to the pot with their juices. Add remaining ingredients; simmer 1 hour. Serve in bowls and sprinkle with tortilla chips, cover with cheese.
Makes a large pot, about 12 servings.
